Score is the primary metric for achievement in Score Attack modes. Making clears will add to your score, and at the end of the game, a rank is conferred based on your score. In multiplayer matches, score is still tracked to some extent as the game records the highest-scoring move, its chain length, and who performed it, and presents that as the game's Best Move. However, it is otherwise ignored.

Like garbage, score is calculated from the length of your chain and how many petals are involved in it. The formula can be expressed as:

(min(Chain, 11) + 1) * 50 * PetalsCleared

As such, maximally efficient play where all clears are part of an 11-chain (or larger) will result in 600 points per clear, and minimally efficient play where all clears are 1-chains will result in 100 points per clear.
